The Little Miss was quite ill yesterday, beset with a horrible cough that made her throat raw and even worse, made her tummy muscles ache. She spent most of the day in great discomfort and slept fitfully last night. This morning when I opened my eyes, a pair of bright brown ones look into mine and the sweetest voice asked, without so much as a cough, ‘Mummy, will you bake me some chocolate chip cookies?’ And this, dear readers, was my answer. Enjoy.

 

Triple Choc-chip Cookies

This recipe was adapted from a Womens Weekly recipe. It has less sugar than the original, and I omitted milk chocolate in favour of more of the white and dark chocolate. The result is a very choclatey and not-too-sweet cookie.

Ingredients:

125g butter, softened

1/2 tsp vanilla extract

200g sugar

1 egg

150g plain flour

35g self-raising flour

1 tsp bicarbonate of soda

35g cocoa powder

100g white chocolate Melts, coarsely chopped

100g dark chocolate Melts, coarsely chopped

Method

Preheat oven to 180C/160C fan forced

Line or grease oven trays

Beat butter, sugar, extract and egg together with an electric beater until smooth

Stir in sifted dry ingredients, then the chocolate

To make extra large cookies, roll a ping pong ball sized dough and flatten on trays. Allow at least 5-7 cm between each cookie.

Bake 10-15 minutes for extra large cookies, allow to cool slightly on tray before transferring to cooling rack

For a crunchier cookie, bake an extra 2 minutes

     

 Prognosis for recovery: excellent!
